Super chocolatey, chewy, and fudgy. Here is what you'll need! The Best Fudgy Brownies Servings: 9 INGREDIENTS 8 ounces good-quality chocolate ¾ cup butter, melted 1¼ cups sugar 2 eggs 2 teaspoons vanilla ¾ cup all-purpose flour ¼ cup cocoa powder 1 teaspoon salt PREPARATION Preheat oven to 350°F/180°C. Chop the chocolate into chunks. Melt half, then save the other half for later. Mix the butter and the sugar, then beat in the eggs and vanilla for 1-2 minutes until the mixture has become fluffy and light in color. Whisk in the reserved melted chocolate (make sure the chocolate is not too hot or else the eggs will cook), then sift in the flour, cocoa powder, and salt. Fold the dry ingredients into the wet ingredients, being careful not to overmix as this will cause the brownies to be more cake-like in texture. Fold in the chocolate chunks, then transfer the batter into a parchment paper-lined square baking dish. Bake for 20-25 minutes, depending on how fudgy you like your brownies, then cool completely. STEAK AND POTATO NACHOS Serves 4 - 6 INGREDIENTS 2 russet potatoes, sliced 1 pound skirt steak 4 tablespoons olive oil Salt, to taste Pepper, to taste 2 teaspoons paprika 1 cup shredded cheddar cheese ½ cup shredded Monterey Jack cheese Garnish Sour cream Salsa 2 green onions, sliced PREPARATION 1. Place sliced potatoes in a large bowl. Toss with olive oil, salt, pepper, and paprika. 2. Lay the potatoes on a baking sheet and bake at 450˚F / 230˚C for 20 minutes or until tender and golden brown. 3. Season skirt steak with salt and pepper. Cook on high heat for roughly 3 minutes each side, for medium-rare. 4. Let the steak rest for 10 minutes, then slice into cubes. 5. In a cast iron skillet or on a baking sheet, arrange cooked potatoes into a heap. Top with steak, then cheddar and monterey jack cheese. Broil for 5 minutes or until the cheese is melted. 6. Serve immediately with sour cream, salsa, green onions or any topping of choice. KIMCHI PORK BELLY NACHOS Servings: 4 - 6 INGREDIENTS 1 pound pork belly, sliced 2 garlic cloves, minced 2 tablespoons soy sauce 2 tablespoons red pepper powder 1 tablespoon honey ⅓ cup kimchi juice tortilla chips ½ cup shredded cheddar cheese ½ cup shredded Monterey Jack cheese Garnish chopped kimchi red onions, diced Tomatoes, diced Scallions, sliced ⅓ cup sour cream ¼ cup kimchi juice PREPARATION 1. Combine pork belly slices with garlic, soy sauce, red pepper powder, honey and kimchi juice. Mix until the pork belly is coated in red. 2. Pan fry pork belly until fat has rendered and is crispy. 3. Assemble your nachos. In a skillet, lay down a layer of tortilla chips, sprinkle on the cheeses, add chopped kimchi, toss on the cooked pork belly, top with some chopped red onions. And repeat. 4. Melt the cheeses under the broiler until crispy and bubbly. 5. Mix together the sour cream and kimchi juice and drizzle on top of the nachos. Add any garnishes to taste and enjoy! SPICY CHEESY BLACKENED CHICKEN NACHOS INGREDIENTS 3 large chicken breasts, cubed Cajun seasoning, to taste 1 tablespoon garlic powder 1 tablespoon chili powder 1 tablespoon pepper flakes 1 tablespoon hot sauce 1 onion, diced 2 jalepeños, diced 5 roma tomatoes, diced 1 can corn 1½ cups pepper jack cheese Garnish Salsa Sour Cream Fresh Basil Tortilla Chips PREPARATION 1. Toss chicken with Cajun seasoning, garlic powder, chili powder, pepper flakes, and hot sauce. 2. Cook chicken in a cast-iron skillet, on a high heat for about 10-15 minutes. Be careful not to overcrowd the skillet. Once the chicken is fully cooked, set aside. 3. Sauté onion, jalepeños, tomatoes, and corn in the skillet. Add more cajun seasoning. Once the veggies have softened, return the chicken to the mixture. 4. Top it all off with freshly grated pepper jack cheese, salsa, and broil that till the cheese is melted. 5. Garnish it with tortilla chips, fresh basil, and sour cream, or whatever you’re feeling! Pan-Seared Steak Servings: 2 INGREDIENTS 1 (2-inch thick) rib eye steak, preferably USDA Prime Salt Pepper 3 tablespoons canola oil 2 tablespoons butter 2 garlic cloves, peeled and smashed 2 sprigs fresh rosemary 3 sprigs fresh thyme PREPARATION 1. Generously season all sides of the steak with salt and pepper. 2. Heat the canola oil in a pan over high heat until smoking. Do not use olive oil, as its smoke point is significantly lower than that of canola oil and will smoke before reaching the desired cooking temperature. 3. Sear the steak for 3-4 minutes on the first side, then flip. Times may vary depending on the thickness of the steak. 4. Add the butter, garlic, rosemary, and thyme and swirl around the pan. Transfer the garlic and herbs on top of the steak and baste the steak with the butter using a large spoon. 5. Baste for about 3 minutes, then flip and baste the other side for about 15 seconds. 6. Turn the steak on its side and cook to render off any excess fat. 7. Rest the steak on a cutting board or wire rack for about 10 minutes. Slicing the steak before the resting period has finished will result in a lot of the juices leaking out, which may not be desirable. Reverse-Seared Steak Servings: 2 INGREDIENTS 1 (2-inch thick) rib eye steak, preferably USDA Prime Salt Pepper 3 tablespoons canola oil 2 tablespoons butter 2 garlic cloves, peeled and smashed 2 sprigs fresh rosemary 3 sprigs fresh thyme PREPARATION 1. Preheat oven to 200°F/95°C. 2. Generously season all sides of the steak with salt and pepper. 3. Transfer to a wire rack on top of a baking sheet, then bake for about 45 minutes to an hour until the internal temperature reads about 125°F for medium-rare. Adjust the bake time based on if you like your steak more rare or more well-done. 4. Heat the canola oil in a pan over high heat until smoking. Do not use olive oil, as its smoke point is significantly lower than that of canola oil and will smoke before reaching the desired cooking temperature. 5. Sear the steak for 1 minute on the first side, then flip. 6. Add the butter, garlic, rosemary, and thyme and swirl around the pan. Transfer the garlic and herbs on top of the steak and baste the steak with the butter using a large spoon. 7. Baste for about 1 minutes, then flip and baste the other side for about 15 seconds. 8. Here is what you'll need! BUTTERMILK FRIED CHICKEN THIGHS Servings: 8-12 INGREDIENTS 8-12 boneless skinless chicken thighs Oil for frying Buttermilk Marinade 2 cups buttermilk 1 teaspoon salt 1 teaspoon black pepper ½ teaspoon cayenne pepper Seasoned Flour 2 cups all-purpose flour 1 tablespoon salt 1½ teaspoons black pepper 1 teaspoon cayenne pepper 1 tablespoon garlic powder Dill Dip 1½ cups plain Greek yogurt 3 tablespoons chopped dill 1 tablespoon garlic powder 2 tablespoons lemon juice Honey Lemon Dip 1 lemon, juiced 2 tablespoons honey 1 teaspoon red chili flakes PREPARATION In a medium bowl, combine all the buttermilk marinade ingredients. Toss in chicken thighs and marinate for at least one hour in the refrigerator. In a small bowl, combine all the ingredients for dill dip. Cover and let sit for at least an hour in the refrigerator. In a small bowl, combine all the ingredients for honey lemon dip. In a medium bowl, combine all ingredients for seasoned flour. Dip chicken in flour until chicken is completely covered. Repeat for all chicken thighs. Heat the oil to 350˚F/180˚C in a deep pot. Do not fill more that ½ full with oil. Carefully fry chicken for roughly 7 minutes, or until cooked through (internal temperature should reach 165˚F/75˚C), and it’s golden brown and crispy. Drain on a paper towel. Serve with dips. SZECHUAN PEPPER FRIED CHICKEN LEGS Servings: 6-8 INGREDIENTS 8 drumsticks Oil for frying Salt, to taste Pepper, to taste Batter 1 cup cornstarch ½ cup all-purpose flour 1 teaspoon salt ¼ teaspoon black pepper 1 cup water Spice Mix 1½ tablespoon Szechuan pepper powder 1 tablespoon red pepper flakes 1 tablespoon cumin 3 tablespoon sugar 1 teaspoon salt Aromatics 6 cloves garlic chopped 2 tablespoons ginger chopped 1 cup dried chillies 3 tablespoons vegetable oil PREPARATION Pat dry drumsticks and season with salt and pepper. Air-dry in refrigerator for at least 2 hours and up to overnight. Prepare all aromatics for stir frying, and combine spice mix ingredients in a small bowl. Stir together until evenly mixed. Heat ¾ inch of vegetable oil to 300°F/150˚C in cast-iron skillet or large pot. Whisk together ingredients for batter until smooth. Dip individual drumsticks in the batter to coat, allowing excess batter to drip before placing in frying oil. Fry drumsticks 8-10 minutes, turning halfway through. Remove and rest chicken on paper towels to drain for at least 10 minutes. Turn oil temperature up to 375°F/190˚C. Re-fry drumsticks for 3-4 minutes or until golden brown, turning frequently. Remove to paper towels to drain. In a wok or large sauté pan, heat 3 tablespoons of vegetable oil over high heat. Once it smokes, carefully add aromatics and stir fry for 90 seconds. Add chicken and sprinkle half of the spice mix evenly over the top. Toss chicken and aromatics to coat evenly, then add the other half of the spice mix and repeat. Remove from heat. Arrange chicken on plate and top with stir fried aromatics. Enjoy! TEBASAKI FRIED CHICKEN WINGS Servings: 2 INGREDIENTS 8 chicken wings Salt, to taste Pepper, to taste Potato starch, to dredge Frying oil, as needed Sweet Soy Glaze ½ cup (100 milliliters) soy sauce ¼ cup (50 milliliters) mirin ¼ cup (50 grams) sugar ¼ cup (50 milliliters) sake 1 clove garlic, grated Garnish Toasted white sesame PREPARATION Preheat oil to about 160˚C/320˚F. Season both sides of the chicken wings with salt and pepper. Coat with potato starch. Fry the wings at 160˚C/320˚F for approximately 7 minutes. Remove cooked wings from oil. Raise oil temperature to about 180˚C/350˚F. Return the wings to the oil and fry until golden brown, about 3 minutes. Drain them on paper towels. Set aside. Make the graze. Combine all the glaze ingredients in a shallow pan and bring it to a simmer. Reduce until thick. Toss in the wings. Sprinkle toasted white sesame. Enjoy! Homemade Chocolate Croissants (Pain Au Chocolate) Servings: 8 INGREDIENTS 4 cups flour ½ cup water ½ cup milk ¼ cup sugar 2 teaspoons salt 1 packet instant yeast 3 tablespoons unsalted butter, softened 1¼ cup cold unsalted butter, cut into ½-inch thick slices 1 egg, beaten 2 bars chocolate PREPARATION In a large bowl, mix the flour, water, milk, sugar, salt, yeast, and butter. Once the dough starts to clump, turn it out onto a clean counter. Lightly knead the dough and form it into a ball, making sure not to over-knead it. Cover the dough with plastic wrap and refrigerate for one hour. Slice the cold butter in thirds and place it onto a sheet of parchment paper.. Place another piece of parchment on top of the butter, and beat it with a rolling pin. Keeping the parchment paper on the butter, use a rolling pin to roll the butter into a 7-inch square, ½-inch thick. If necessary, use a knife to trim the edges and place the trimmings back on top of the butter and continue to roll into a square. Transfer the butter layer to the refrigerator. To roll out the dough, lightly flour the counter. Place the dough on the counter, and push the rolling pin once vertically into the dough and once horizontally to form four quadrants. Roll out each corner and form a 10-inch square. Place the butter layer on top of the dough and fold the sides of the dough over the butter, enclosing it completely. Roll the dough with a rolling pin to seal the seams, making sure to lengthen the dough, rather than widening it. Transfer the dough to a baking sheet and cover with plastic wrap. Refrigerate for 1 hour. Roll out the dough on a floured surface until it’s 8x24 inches. Fold the top half down to the middle, and brush off any excess flour. Fold the bottom half over the top and turn the dough clockwise to the left. This completes the first turn. Refrigerate for one hour. Roll out the dough again two more times, completing three turns in total and refrigerating for 1 hour in between each turn. If at anytime the dough or butter begins to soften, stop and transfer back to the fridge. After the final turn, cover the dough with plastic wrap and refrigerate overnight. To form the croissants, cut the dough in half. Place one half in the refrigerator. Flour the surface and roll out the dough into a long narrow strip, about 8x40 inches. With a knife, trim the edges of the dough. Cut the dough into 4 rectangles. Place the chocolate on the edge of the dough and roll tightly enclosing it in the dough. Place the croissants on a baking sheet, seam side down. Repeat with the other half of the dough. Brush the croissants with the beaten egg. Save the rest of the egg wash in the fridge for later. Place the croissants in a warm place to rise for 1-2 hours. Preheat oven to 400°F (200°C). Once the croissants have proofed, brush them with one more layer of egg wash. Bake for 15 minutes or until golden brown and cooked through. Enjoy warm! Here is what you'll need! 3-INGREDIENT CHOCOLATE ICE CREAM Servings: 6 INGREDIENTS 1 pint heavy whipping cream 1 (14-ounce) can sweetened condensed milk, cold 10 ounces bittersweet chocolate, melted PREPARATION 1. Place a large glass or stainless steel mixing bowl in the freezer for at least 15 minutes. 2. In a small microwave-safe bowl, combine chocolate and sweetened condensed milk. 3. Microwave 30 seconds at a time, stirring after each, until melted. 4. Set aside to cool slightly. 5. Remove the mixing bowl from the freezer and add the heavy whipping cream. 6. Beat with an electric mixer until the cream begins to form firm peaks. 7. Fold a large spoonful of the whipped cream into the chocolate mixture to thin it out. 8. Fold the chocolate mixture back into the whipped cream mixture until just combined, being careful not to over-mix, which will deflate the whipped cream. 9. Pour into a loaf pan or 9x9-inch baking pan. Cover and freeze until firm, about 4 hours. 10. Enjoy! HOMEMADE CHOCOLATE ICE CREAM Servings: 1.5 quarts INGREDIENTS 2 cups heavy whipping cream 1½ cups whole milk ¾ cup sugar, divided ¼ cup cocoa powder ¼ teaspoon salt 7 egg yolks 10 ounces bittersweet chocolate, melted and cooled slightly Equipment Ice cream maker PREPARATION 1. In a medium saucepan over medium heat, add the heavy whipping cream, whole milk, ½ cup of sugar, cocoa powder, and salt. Heat the mixture, stirring occasionally, until the sugar has dissolved and the mixture is hot and steaming (but not quite at a simmer). The temperature should read between 175-180˚F (80-82˚C). Remove from heat. 2. While the milk mixture is heating, whisk together the remaining ¼ cup of sugar with the egg yolks in a small mixing bowl. Whisk in the melted chocolate until smooth. 3. Add about 1 cup of the hot milk mixture to the eggs and chocolate, and whisk until smooth. 4. Pour the egg mixture back into the saucepan and return to heat. 5. Cook over low-medium heat for 5-10 minutes, stirring constantly, until the mixture has thickened and begins to steam, or until the mixture reaches 175-180˚F (80-82˚C) on an instant-read thermometer. To prevent cooking the eggs, do not let the mixture boil. 6. Remove from heat and pour the mixture through a fine-mesh sieve into a large mixing bowl. Stir in the vanilla. 7. Allow the custard to cool slightly before covering with plastic wrap and chilling in the refrigerator for at least 4 hours, preferably overnight. 8. Once the custard has cooled, transfer to an ice cream maker and follow the manufacturer's directions for use. 9. Serve immediately or transfer the finished custard to a loaf pan or a 9x9-inch baking pan. Cover and freeze until firm. 10. Enjoy! CARAMEL APPLE CRISP CHEESECAKE Serves 12 INGREDIENTS Crust 2 cups graham cracker crumbs ⅛ cup brown sugar ⅓ cup butter, melted Filling 16 ounces cream cheese, softened ¼ cup brown sugar ¼ cup white sugar 2 tablespoons cornstarch 1 teaspoon cinnamon ¼ teaspoon ginger 1 teaspoon vanilla extract 2 green apples, peeled and thinly sliced Topping ¼ cup rolled oats ¼ cup flour ¼ cup brown sugar 1 teaspoon cinnamon 2 tablespoons butter, melted Caramel sauce PREPARATION Preheat oven to 350°F/180°C. In a bowl, mix the crust ingredients. Press into the bottom of a greased 8-inch springform pan. Bake for 5 minutes. In another bowl, mix all the filling ingredients except the apples. Spread over the graham cracker crust, then layer the apple slices on top. In another bowl, mix all the topping ingredients except the caramel, and sprinkle evenly over the apple layer. Preheat oven to 350°F (180°C). 2. In a mixing bowl, add the cream cheese, sugar, and vanilla, and use a hand mixer to beat until creamy. 3. Add the eggs, beating until combined, while slowly adding in the milk, until smooth. 4. Using cold crescent dough, roll up crescent rolls and curve into crescent shape. 5. Place rolls in an ungreased 9x9-inch pan. 6. Sprinkle the blueberries over the crescent rolls. 7. Pour the cream cheese mixture over the crescent rolls and blueberries. 8. Bake for 35 minutes, or until rolls have become golden brown. 9. Top with powdered sugar, and enjoy! #9 WAFFLES 4 WAYS CINNAMON ROLL WAFFLES Makes: 4 waffles INGREDIENTS 17 ounce tube cinnamon roll dough Icing PREPARATION 1. Place 4 cinnamon rolls in a preheated, greased waffle iron. 2. Cook for 2-3 minutes, until golden brown. 3. Drizzle with icing, and enjoy! PIZZA WAFFLES Makes: 4 waffles INGREDIENTS 1 14-ounce tube pizza dough or homemade pizza dough 4 tablespoons marinara sauce 1 cup shredded mozzarella 12 slices pepperoni PREPARATION 1. Slice the pizza dough into 8 equal pieces, then press each piece flat. 2. Place 4 pieces of dough into a preheated, greased waffle iron. 3. Spread one tablespoon of marinara, ¼ cup of mozzarella, and 3 slices of pepperoni on each piece of dough. 4. Top with the 4 remaining pieces of dough and seal. 5. Cook for 3-5 minutes, until golden brown. 6. Serve! BREAKFAST PANINI WAFFLE Makes: 1 INGREDIENTS 2 slices sourdough bread 3 eggs, scrambled 1 tablespoon chives, chopped 2 slices ham 3 slices provolone PREPARATION 1. Place a slice of bread in a preheated, greased waffle iron. 2. Spread the eggs evenly on top. 3. Sprinkle the chives over the eggs. 4. Top with the ham, followed by the cheese. 5. Place the second slice of bread on top. 6. Cook for 3-5 minutes, until cheese is melted and the bread is golden brown. 7. Serve! BROWNIE WAFFLE SUNDAE Makes: 8 waffles INGREDIENTS 1 box brownie mix, prepared according to package instructions Vanilla ice cream, to serve Caramel sauce, to serve PREPARATION 1. Place 4 large dollops of brownie batter in a preheated, greased waffle iron. 2. Cook for 2-3 minutes, until brownies are semi-firm to the touch. 3. Serve with vanilla ice cream and caramel sauce, and enjoy! #8 EGGS IN CLOUDS Servings: 2 INGREDIENTS 2 eggs 4 ounces bacon, chopped ¼ cup chives, chopped 1 cup shredded Parmesan PREPARATION 1. Preheat oven to 450°F (230°C). 2. Separate the egg yolks and whites. 3. In a chilled metal bowl, whisk the whites until airy peaks form. 4. Add in the bacon, chives, and Parmesan. 5. Spoon the whites into two even piles on a parchment paper-lined baking sheet and create a well in the center. 6. Bake for 3 minutes. 7. Add the yolk to each well, and bake another 3 minutes. 8. Serve and enjoy! #7 CHEESY BAKED HASH BROWN PATTIES Servings: 9 INGREDIENTS 4 red potatoes ½ cup butter, melted 1 cup shredded cheddar cheese 2 eggs, whisked ¼ cup chives, chopped 1 tablespoon garlic salt 1 teaspoon oregano ½ teaspoon pepper PREPARATION 1. Preheat oven to 400°F (200˚C). 2. Peel and grate the potatoes. 3. Add the shredded potatoes to a large bowl of ice water. 4. Strain the potatoes and transfer to a large bowl. 5. Add the butter, cheese, eggs, chives, garlic salt, oregano, and 6. pepper in with the shredded potatoes and mix to combine. 7. So for example, you still wake up at 4:30 in the morning, to go workout, what was it about your time in the Seals, that you wanted to keep these habits up? Jocko Willink: They're good habits, why would you not wake up at 4:30? Richard Feloni: Well what does this bring to you? Jocko Willink: Waking up early? You just get a jump on the day. The reason I wake up at 4:30 in the morning is because no one else is awake yet, so that gives me the opportunity to do things that I need to get done, kinda selfishly for myself, and the big one in that category is working out. And it doesn't feel good at 4:30 when you get up, but by the time 7 o'clock rolls around, and you've already worked out, and you've already got some work done, and you've got some time to say goodbye to your kids before they go to school? It's infinitely better than sleeping in until 6:45, and you get out of bed, and now you've missed your kids going to school, or whatever. You're not prepared for the day, it's awful. Feloni: So if someone, maybe they don't have time to work out or they just need something that could be like a quick fix, is there something that you recommend? Willink: Oh yeah, workouts don't have to take a long time. Workouts can be very quick. Matter of fact, go do two minutes of burpees, as many burpees as you can, in two minutes, or four minutes, or six minutes, go and sprint, go and do anything very intensely, for a short period of time and you'll get great benefit out of it. Feloni: Something I'm sure you hear a lot is 4:30, like this either just can't fit into my schedule, or if I'm gonna be realistic, I'm probably not gonna wake up at 4:30, what do you tell people who say that? Willink: Yeah, and there's people that work night shifts, and there's people that it's unhealthy for them, they can't fall as-- it's like no, be healthy, get enough sleep, but, first of all, wake up at the same time every day and, if you pick that time and you start waking up at the same time every day, that's very good for you. It doesn't have to be 4:30, it could be 6:30, it could be 7, I don't know what your personal schedule is, but find out a time, pick it, set it, stick to it, and maintain that schedule, and that's gonna end up better for you. I recommend it's earlier. I recommend that you go to bed earlier, 'cause what are you doing at night, most of the time? Most of the time at night, you're not working on anything super productive, you're just winding down and watching stupid YouTube videos, or surfing the internet, reading clickbait stories, right? Don't do that, instead, go to sleep, and then wake up early. Feloni: Could you explain that notion of discipline equals freedom? Willink: If you want more freedom in your life, you have to have more discipline. If you don't have any discipline, you'll end up with absolutely no freedom, you'll end up being a slave to other people that boss you around. There's all kind of problems that can occur, if you don't have discipline in your life. And the more discipline you have, the more freedom you're gonna have. Feloni: So just the discipline of the Seals, will never-- it's impossible to leave? Willink: No, it's possible to leave, there's retired seals all over the place that are undisciplined. They've moved on, and they don't care about that anymore. It's fine, I don't judge other people on what they're doin', like they're probably stoked to sleep in and hang out with their kids, and eat breakfast in bed, that's fine. I don't have anything against that. But for me? I wanna get up and go.

Garlic Mashed Sweet Potatoes Serves 4-6 INGREDIENTS 4-5 sweet potatoes 2 tablespoons butter, melted ¼ cup heavy cream 3 cloves garlic, minced 1 teaspoon salt 1 teaspoon pepper PREPARATION Add potatoes to a large pot of salted water. Place over medium/high heat and bring to a boil. Cook until fork tender, about 15-20 minutes. Drain, peel, and mash potatoes until they reach a smooth consistency. Add remaining ingredients to mash and mix to incorporate. Enjoy! Sweet Potato Fries Serves 4-6 INGREDIENTS 1-2 medium-large sweet potatoes 2 tablespoons olive oil 1 tablespoon rosemary 1 teaspoon pepper 1 teaspoon salt PREPARATION Preheat oven to 425ºF/220ºC. Slice the ends off of the sweet potato and then slice it in half. Take one half and slice it horizontally 4 times then slice vertically 4 times to cut into fries. In a large bowl mix fries and ingredients until evenly spread. Place fries on a prepared baking sheet and bake for 25 minutes. Enjoy! Tornado Sweet Potato Serves 4 INGREDIENTS 2 large sweet potatoes 2 tablespoons butter, melted ¾ cup vegetarian parmesan cheese 1 teaspoon garlic powder 1 teaspoon cumin 1 teaspoon paprika 1 teaspoon chili powder PREPARATION Preheat oven to 400ºF/200ºC Take potatoes and poke them on all sides with a fork. Microwave for 2-3 minutes. Coat a wooden skewer with oil and insert the skewer through the length of the potato. Hold a sharp, thin knife at an angle and cut through the end of the potato until it hits the wooden skewer. Begin rotation the potato to cut down the length of it and form a spiral. Gently fan out the potato down the length of the skewer, until you have an even gap between the slices forming the spiral. Brush the potato with melted butter. In a medium bowl, combine remaining ingredients. Shovel the dry mixture all over the potato until it is entirely coated. Rest the skewered potatoes over a baking pan so the skewers suspend the potato over the bottom of the pan. Bake for 25-30 minutes, or until nicely browned. Garnish with additional parmesan and parsley. Allow to cool for 5 minutes. Serve warm and enjoy! Loaded Sweet Potato Skins Serves 6-8 INGREDIENTS 4 sweet potatoes ¼ cup milk 1 teaspoon salt 1 teaspoon pepper 1 cup mozzarella cheese, shredded 1 cup cheddar, shredded 2 roma tomatoes PREPARATION Preheat oven to 400ºF/200ºC. Take potatoes and poke them on all sides with a fork. Bake for 50 minutes, or until fork tender. Allow potatoes to cool, then cut off either end and cut in half lengthwise. Scoop out potato flesh leaving a thin layer of sweet potato inside, and add flesh to a medium bowl. Place skins back on baking sheet, drizzle with olive oil and bake at 400˚F/200˚C for 10 minutes. Mash sweet potato flesh with milk, salt, and pepper until smooth and creamy. Remove sweet potato skins from oven, fill each with an equal amount of potato mixture and top with cheese and diced tomatoes. Bake at 400˚F/200˚C for 15 minutes until the cheese is melted.
