When we talk about “whole wheat” we are basically saying that the whole grain of wheat is being used to make something. The grain is made up of 3 parts, the endosperm, the germ and the bran. The endosperm makes up about 83 percent of each kernel. The bran makes up about 14.5% and the germ 2.5%. Breads, crackers, pasta, flour, cereal, condiments, beer, just a short list of how we use wheat. It is hard to find processed foods without some type of wheat product in it. Wheat has been around since the cradle of civilization. Wheat is not bad, but has changed. The endosperm is the starchy part of wheat. When white flour is made, the endosperm is all of the grain that is used. So much of the fiber and nutrients are lost because the bran and germ house the bulk of that material. So because whole wheat bread has all this stuff in tact it must be better for you than white bread, right? Not exactly. If you have seen many of our videos, you know I am a firm believer in the glycemic load as a measure for whether or not a food might be good or bad for diabetes. Let’s compare whole wheat with white bread on that basis. Whole wheat has a GI of 69 and GL of 9. Both are at the upper level of low on the scales. White bread has a GI of 73 and GL of 10. Not a great deal of difference is there? The main difference is seen in whole GRAIN bread where the GI is 51 and the GL is 7. So is whole wheat bread good for diabetes? It is, but not as good as whole grain bread and not really any worse than white bread. Breads, like many other foods, must be eaten in moderation. So I want to give you just a brief lesson on how carbohydrates affect those with diabetes before we answer the question about rye bread. I searched several books and sites to find a concise, accurate discussion on this topic. The Harvard School of Public Health had a great article on the topic, here is a portion of it. “When people eat a food containing carbohydrates, the digestive system breaks down the digestible ones into sugar, which enters the blood. But the biggest benefit of Ezekiel bread is not just its blend of ingredients, but rather that its ingredients are sprouted first. Sprouting, which is soaking the grains in water and allowing them to germinate, causes a number of biochemical reactions in the grain. This has two huge benefits: It increases the amount of healthy nutrients, and reduces the amount of harmful anti-nutrients in the grain. Sprouting grains can also increase their content of the amino acid lysine, which is a building block of protein. Combined with the addition of legumes, this increases the protein quality of Ezekiel bread somewhat. Sprouted grains also have lower amounts of anti-nutrients, which are substances that inhibit the absorption of certain beneficial nutrients. Phytic Acid is a substance found in grains and many other foods. It can bind minerals like Zinc, Calcium, Magnesium and Iron and prevent them from being absorbed. Enzyme inhibitors are present in seeds, which protect them from spontaneously germinating but may also make the nutrients in them harder to access. Sprouting inactivates some of them. Sprouting also reduces the amount of gluten in the grain, a protein that many people are sensitive to. I should point out that it still contains gluten though, so Ezekiel bread is out of the question for people with celiac disease or strong gluten sensitivity. So there you have it, if you’re not on a carb restricted diet and not gluten sensitive, then Ezekiel bread can be a healthier choice to commercial bread. But remember at the end of the day, Ezekiel bread is still bread. For optimal nutrition, you may be better to cut down on bread and other processed foods altogether. Ezekiel Bread Ezekiel bread is a really healthy bread made with several types of sprouted grains and legumes. The grains are allowed to sprout before processing, which makes the end product much more nutritious and easily digestible. It also contains no added sugar, but it does still contain gluten. So if you are sensitive to gluten, Ezekiel bread is not the best option for you. 2. Oopsie Bread Oopsie bread is one of the simplest and most popular low-carb breads. It can be made from only eggs, cream cheese and salt, although some recipes add more ingredients. It's quite easy to make, and delicious as a bun for burgers or served with toppings like you would toast. 3. Rye Bread This bread is made from rye, a type of grain that is related to wheat. It is darker and denser than regular bread, as well as much higher in fiber. But this also gives it a stronger, more unique flavor that may be an acquired taste. Some rye breads are a mixed blend of rye and wheat, so they are a little lighter and have a mild, sweet flavor. But keep in mind that rye bread still contains some gluten. 4. Corn Tortillas Tortillas can be made with either wheat or corn, but corn tortillas are higher in fiber and gluten-free, making them a great option for people who are sensitive to gluten. You can use corn tortillas in sandwiches, wraps, burgers, pizzas or simply with toppings like vegetables and cheese. It's also easy to make corn tortillas yourself because they contain only two ingredients: water and a Mexican flour called Masa. 5. Lettuce and Leafy Greens Big-leafed greens like iceberg lettuce or romaine lettuce are also a great substitute for bread or wraps. The large leaf can be used as a wrap to hold everything together, while you fill it with toppings like meat or veggies. They are extremely fresh and dramatically lower in calories than bread-based wraps. Six Snacks You Can Eat Before Bed to Cure Diabetes DIABETES treatment includes controlling your diet to avoid blood sugar levels spiking, which can cause damage to your body. But the wrong kind of snack can actually make things worse. Instead of high-carb fare like chips, “aim for a bedtime snack of protein plus carbohydrate. Cereal and Milk Most bedtime snacks contain about 15 to 30 g of carbohydrate, or two servings of a carbohydrate-containing food, and a serving of protein. It is not quite understood why protein helps to prevent nightly hypoglycemia, according to the authors of the "Diabetes Care" study, it is believed to be related to the way protein is metabolized. Cereal and milk provides both carbohydrate and protein. A good bedtime snack consists of 3/4-cup serving of whole-grain cereal and 1-cup of low-fat milk. During cold months, you can try 1/2 cup of hot cereal with 2 tbsp. of raisins and 1 cup of skim milk as a cereal bedtime snack. Crackers and Peanut Butter Crackers provide the carbohydrate and peanut butter provides the protein. Spread 12 whole-grain crackers with 3 tsp of peanut butter or you can also try six whole-grain crackers with 3 tsp of peanut butter and 1-cup of skim milk. Each of these snacks contains 30 g of carbohydrate. Sandwiches Sandwiches also make a good bedtime snack for diabetics. Choose lean sources of meat to decrease your intake of saturated fat. Too much saturated fat in the diet increases blood cholesterol levels, another risk factor for heart disease. Bedtime sandwich ideas include two slices of whole wheat bread with 1 oz. of turkey, 1 oz. of low-fat cheese or 1 oz. of canned tuna. For a lighter snack, you can also try half of a sandwich with a piece of fresh fruit or a 2/3-cup serving of nonfat sugar-free fruited yogurt. A toasted cheese sandwich with two slices of toasted bread and one slice of low-fat cheese also makes a healthy bedtime snack. They are different from 'white' bread in as much as 'white' breads are made from ground wheat endosperm (after removal of the bran and germ). Whole grain breads include the bran, germ and endosperm, therefore providing more fibre, and naturally-occurring vitamins and proteins. Rich in Vitamins And Minerals: When grains, seeds and nuts are germinated, their nutritional content improves and becomes more available to people. Because Essene bread is not baked at high temperatures, more vitamins, minerals and amino acids are available that would otherwise be destroyed. For example, sunflower sprouts are high in vitamins A and C, while bean sprouts are high in vitamin C, iron and potassium, according to "Contemporary Nutrition." Commercial bread manufacturing uses only the endosperm of the wheat kernel, which contains mainly carbohydrate and very little vitamin or mineral content. The commercial milling of grain into white flour removes the bran and the germ, which results in the loss of natural fiber and numerous vitamins and minerals. To compensate, bread manufacturers often add back thiamine, riboflavin, niacin, folic acid, calcium and iron. Essene bread, on the other hand, retains all the nutrients from its grains.

True, however, if you only eat donuts and cake, will you get the protein, healthy fats, vitamins and minerals you need for a lean, healthy body? You won’t - and that’s why a proper diet is so important. A calorie is not a calorie - some food are simply better for you than others. A 100 grams of fructose won’t have the same impact on the body as 100 grams of quality protein. Sugar With a nickname like “white death”, it’s no surprise sugar is at the top of this list. Sugar is nothing more than empty calories. It has no nutritional value, no vitamins and no minerals. It spikes your blood glucose and in the long term leads to metabolic syndrome, obesity, cardiovascular disease and especially type II diabetes. You can even get addicted to it and suffer withdrawal symptoms because sugar causes a release of dopamine in the reward center of the brain. Not to mention that it is extremely bad for you teeth. So what can you when you get the sweet tooth? Raw honey is a great substitute that won’t spike your insulin and actually has a ton of amino acids, vitamins, minerals and enzymes. 2. Refined grains Pasta, bread, and pizza are delicious. However, most of them are made out of refined grains. Refined grains are high on the glycemic index and can spike your blood sugar levels, leading to weight gain and type II diabetes. One study found that eating just two slices of white bread per day was linked to a 40% greater risk of weight gain and obesity (https://www.ncbi.nlm.nih.gov/pubmed/25335643/). In the process of refinement, the bran and germ of the grain are removed, along with most of the nutrients. But don’t worry, you can still eat grains - just make sure they’re whole. 3. All sodas and sugary drinks, diet or not What goes for sugar goes for sugary drinks as well. If sugar is just empty calories, then sugary drinks are liquid calories. The problem with these is that we don’t really detect them. You can drink a whole meal’s worth of calories and still be hungry. A single bottle of Coca-Cola “only” has 184 calories, but even if you just have one or two a day, they add up quickly. The best solution is to simply cut them out completely and drink water. 4. Alcohol Alcohol has more calories per gram than carbs or protein - 7. That means it is easy to go over your week’s calories on a Friday night out. But it’s not just the calories. Alcohol is a poison to the body. When you drink it, the liver burns alcohol instead of fat - stopping your fat burning for several hours. For example, a regular beer has 150 calories. A few of those, and some fast food at the end of the night can quickly come out to over 1000 in calories. If you want to drink, do it in moderation. 5. Salt Unlike most of this list, salt is the one thing you shouldn’t give up on. The two minerals found in it - sodium and chloride - are both necessary for optimal function of the body. Going too low leads to higher LDL levels, increased insulin resistance, increased risk of death from heart disease, heart failure and type II diabetes. However, too much salt has been linked to stomach cancer. In fact, people with high salt intake have a 68% higher risk of stomach cancer. Michael Pollan: Getting our head around the idea that we should be focused on the category of foods, not nutrients, is I think very important, and that's why I emphasize that we should be talking about foods. And I think doctors should be talking to patients about foods, even if as scientists and researchers, they see through foods to nutrients. That's not a helpful way. It may be a helpful way to study foods. It's not a helpful way to communicate about them. Let’s look at an example of how, by speaking about nutrients rather than food, we can end up conveying the wrong messaging: in recent years, a great deal of scientific and media attention has been focused on the excessive amounts of carbohydrates in the average Western diet. We will encounter many popular diets trends that encourage us to drastically reduce the carbohydrates in our diet, while we’re given the message that they can eat protein-rich foods of any kind freely. This doesn’t usually lead to a diet that will be healthy for us in the long run. In fact, not all carbohydrates need to be held in contempt of the average healthy person’s diet. Whole grains, like brown rice and rolled oats are carbohydrates that provide our bodies with a useable source of energy and, bound together in that very same food, is a significant amount of fiber, which modulates the release of glucose from that food into the bloodstream. The glycemic index of a food is a measure of the speed at which glucose is released into the bloodstream after it’s digested. A whole grain, like brown rice or quinoa will result in a slower release of glucose and a more muted insulin response. On the other hand, a food that’s high in refined carbohydrates, like white bread or soda, will lead to a more rapid release of glucose into the blood and this is likely to cause a reactive spike in insulin. Because spikes of glucose and insulin lead to less stable blood sugar levels, eating foods that are refined - especially highly processed carbohydrates - can result in an earlier return of hunger – and a tendency to overeat. The glycemic index of a food is lowered when the food contains fiber or when the food is consumed in combination with protein-rich foods or other foods containing dietary fat. For people who are struggling to manage excess weight or elevated blood sugar levels associated with diabetes, eating foods that have a low glycemic index is especially important, but even healthy individuals will benefit from choosing low glycemic foods. So, when we speak about dietary carbohydrates, we’re actually speaking about a very broad family of foods - some that can be harmful to our long-term health and some that can support it. I’ll cut right to the chase. My answer is: sometimes and in moderation. There are three reasons sprouted grains are better than regular grains: 1. Phytic acid is in regular grains, which is an enzyme inhibitor. (If you soak the grains, the sprouted grains unlock the nutrients that your body can absorb.) 2. Gluten in protein becomes more digestible. 3. Regular grains are high in carbohydrates, specifically a type of carbohydrate called amylopectin. Amylopectin affects blood sugar levels and can increase your risk of diabetes. Overall, sprouted grains are the better option, but it’s still not perfect or what I would consider a healing food. If you’re struggling with an autoimmune disease, removing grains for a while would allow your body to heal.
