If you are experiencing symptoms that you believe are associated with gluten consumption, and go to the doctor for a blood test, the doctor will look for gliadin, endomysium, and transglutaminase. One thing the doctor does not tell you is that there are different types of gliadin: alpha, beta, omega and gamma, and the test only looks for alpha gliadin. Glutenin is the other half of gluten. People can be equally as reactive to glutenin as they are to gliadin, but they are not being tested for it. Wheat germ agglutinin (WGA) is a lectin, which binds on to carbohydrates. They are found in high concentrations in whole wheat and sprouted wheat. When you eat WGA, it can cause your red blood cells clump together and it can pass through the blood-brain barrier, attach to your myelin sheath, and reduce nerve growth factor. Deamidated gliadin is the result of the food industry processing gluten to make it water soluble. Your T-cells are very reactive to deamidated gliadin. When you digest gliadin, you make gluteomorphin. The consumption of gluten may trigger antibodies to gluteomorphin and/or prodynorphin which can cause neurological issues. I mean, who doesn’t like pasta, right? Meanwhile a lot of people are allergic or intolerant to gluten without realizing it. Few people know what gluten really is and where it’s found. Then, what exactly is gluten? It’s the mixture of proteins that are specifically found in the formation of grains such wheat, rye, and barley. Because many foods are made from these grains, including healthy foods such as cereal bars, gluten is widely found in our food chain. Knowing that gluten is, is an important step in improving your quality of life; however, some of the symptoms of a gluten allergy or intolerance are so common that many people don’t even realize they are allergic or intolerant to gluten. Besides that, few people know the name associated with gluten intolerance, and are therefore unable to seek treatment or change their eating habits. Have you ever heard of Celiac Disease? This sickness is an autoimmune condition that affects people with hypersensitivity to gluten. Let’s learn about the ten most common symptoms related to a gluten allergy, in order to understand the best way to create a routine to avoid gluten. 1. Digestive problems Slow digestion or indigestion is one of the main symptoms of gluten intolerance and/or Celiac Disease. It’s important to be especially alert to constant flatulence, stomach pain, bloating, and diarrhea. 2. Headache One sign of possible gluten intolerance is chronic headaches, especially after eating anything with gluten in it. This is not a symptom closely linked to Celiac Disease, but it is a good indication of whether you are intolerant to gluten. Try to pay attention whether or not the pain starts after eating foods with gluten. 3. Chronic Weakness Constant fatigue, without having performed any physical exercise, is a strong indication of gluten intolerance as well as for Celiac Disease. 4. Mental Confusion Gluten intolerance can cause confusion, dizziness, and difficulty concentrating. Be aware, as these are also symptoms associated with fatigue, stress or aging. 5. Joint Pain Gluten intolerance causes inflammation in various parts of the body, especially in the joints. 6. Immune System Problems Immune system failures can be consequences of a gluten intolerance. With Celiac Disease, the clearest symptom is anemia, which also damages the immune system. 7. Depression Gluten intolerance is also harmful to people who have depression because it intensifies the symptoms of anxiety, irritability, and sudden mood swings. 8. Skin Lesions For people who have Celiac Disease, skin lesions such as rashes, eczema, psoriasis and others, are very clear symptoms of the disease. These symptoms also appear in people with a gluten intolerance, but to a lesser degree. 9. Tooth Decay When the person has a gluten intolerance, the teeth are weakened and there is a greater chance of cavities. 10. Hormonal Disorders Hormones can also be severely affected in people with an intolerance to gluten. In cases of Celiac Disease, a very rapid increase or decrease in weight may be symptomatic of estrogen levels which are out of control. So periodic hormone-level tests are very important. What to do if you have Celiac Disease and/or gluten intolerance? If you notice more than one of these symptoms in your daily routine, the first step is to pay a visit to your doctor and ask him to order multiple tests. Ask specifically for him to run the test for Celiac Disease. After diagnosis, be prepared to eliminate gluten from your daily diet. If the symptoms are extremely bothersome, you can also do a simple test: Eat a gluten-free diet for a while and check for improvement in your condition. Food allergies are hard - no matter if you're dealing with 1 or 10. And part of what makes it hard is the lack of knowledge available for those who do NOT deal with food allergies, so they can have a better understanding of what we go through in public AND behind the scenes. I made this video of (most of) Leo's last allergy appointment so you can actually see how the testing is done and I take the time to explain the importance of this testing. A few side notes I did not mention in the video: -Most doctors/allergists won't recommend blood or skin tests until the age of 1 -Leo could have taken a blood test the same day to confirm whether or not the negative results were accurate, but we didn't want to put him through that too. Hey everyone! I have exciting news. For the next 2 weeks, I am going to be eating gluten! Yeah, you heard me correctly, but it's probably for a reason you are not thinking. I am testing myself for a gluten allergy, sensitivity, or intolerance along with 96 other foods. Why am I doing this? Well...why not? I would like to know if I am allergic, sensitive, or intolerant to gluten and the only to find that out is to actually eat gluten consistently for 2 weeks. In this episode of Abbey’s Kitchen, Abbey is hosting her favourite series: Toilet Talk. Abbey occasionally gets letters from her viewers and today’s question comes from Georgina who believes she is gluten intolerant. Georgina wants to know whether gluten intolerance is a real condition or just in her head? Abbey defines Gluten intolerance as the presence of gastrointestinal IBS like symptoms in the absence of celiac disease that seem to improve on a gluten free diet. The only way to test for it is to rule out a celiac and allergy of wheat, and to do a food elimination diet, so its ultimately a diagnosis of exclusion. Many early studies found some abnormalities in antibody levels of people who self-identified as having gluten intolerance that’s different from celiac disease. The problem with some of the early studies is that other components of wheat based products like fodmaps we talked about here, were not isolated or accounted for. Abbey shares two studies that did isolate gluten from fodmaps. In both studies, they couldn’t find a strong cause and effect relationship between gluten and digestive issues in patients without celiac disease. Abbey believes there are a few reasons why you feel better when you go GF. Cutting out gluten often means cutting out a lot of processed foods with a ton of added sugar, additives and saturated fats. If you were to continue to just eat donuts every day all day but just make sure they’re gluten free donuts, would you feel automatically better? Most likely not. FODMAPs stand for Fermentable Oligosaccharides, Disaccharides, Monosaccharides AND Polyols and are carbs found in a lot of grains and have been known to cause digestive issues for certain people. While most wheat foods would be eliminated on a gluten free diet, understanding that you have a wheat allergy rather than a gluten intolerance would allow you to enjoy so many more wholesome foods (think barley, oats, and spelt). Abbey is concerned that cutting out gluten means missing out on key dietary fibres, antioxidants, and B vitamins. Gluten free pastries and breads aren’t necessarily healthier than their gluten filled counterparts. They often have less fibre and protein, fewer beneficial nutrients, and more sodium, sugar and fat to make up for what’s removed. Abbey also states that lot of people on gluten free diets end up eating a lot of rice, and there been a lot of talk about arsenic in rice and rice-based foods. Obviously, safe in small amounts, but if eaten over time, there may be an elevated risk of chronic disease. Abbey recommends washing your rice thoroughly to reduce arsenic levels. Grains are one of the best sources of beneficial prebiotics (which Abbey has written about in detail here). Eliminating those beneficial prebiotics in grains may change the healthy gut microflora and increase the risk for chronic disease. The jury is still out on gluten intolerance and there needs to be more large scale studies larger to make definitive statements about its legitimacy. Abbey recommends speaking to a doctor and RD if you are experiencing any symptoms which you think may be attributed to gluten, or anything else before changing your diet.
